NEW YORK—Viceroy Hotel Group recently appointed two new food & beverage directors—Arron Gwinnett for Viceroy Anguilla and Xavier F. Echevarria for Le Méridien Delfina in Santa Monica, CA.
Gwinnett will oversee the operations for five restaurants/bars, room service, and meeting and catering events at Viceroy Anguilla. The 166-room resort features a variety of restaurants including Coba, Aleta, Bamboo, Half Shell and the Sunset Lounge.
Gwinnett comes to Viceroy Anguilla after holding food & beverage management positions at other resorts for companies and brands including Hilton (China), Raffles Hotels & Resorts (China), Conrad Pezula (South Africa) and IHG (India and Abu Dhabi).
With a background in the hospitality industry spanning more than 15 years, Echevarria will oversee all culinary efforts and partnerships for Le Méridien Delfina. Working closely with Russell Wooten, executive chef of Longitude, Echevarria will implement new dining concepts and social events.
Echevarria joins Le Méridien Delfina from The Ritz-Carlton Hotel Group, where he held multiple positions in locations including Atlanta, St. Thomas, and Sarasota, Naples and Tampa, FL.
