New York Palace Replaces Le Cirque With Gilt

NEW YORK— The New York Palace Hotel, which epitomized the 1990s trend of hotels housing destination restaurants with Le Cirque 2000, has selected Gilt to replace the high-profile venue. The chef at Gilt is Paul Liebrandt, who established his reputation at Buley Bakery and Atlas in New York as well as stints in London and Paris. Like Le Cirque, Gilt will be housed in the Palaces ornate Vuillard Mansion, a landmark building that was formerly the residence of the Archbishop of the New York Archdiocese. Le Cirque, meanwhile, closed in 2004.
