PALM SPRINGS, CA—Riviera Palm Springs has launched the Then & Now menu in Circa 59, the hotel’s signature indoor/outdoor restaurant open for breakfast, lunch and dinner.
The Then & Now dinner menu will feature dishes popular during the ’60s, when the Rat Pack members were frequent guests, alongside contemporary American favorites. Circa 59 is a popular destination for both hotel guests and locals, known for its quality seafood, premium cut meats and locally grown Coachella Valley produce.
The Then & Now menu is divided into two sections, the Then section—true to the nomenclature of the times—offering “appetizers” and “entrees,” while the Now side lists “starters” and “mains.” Signature dishes from the Then side include classic appetizers such as Lobster Bisque and Shrimp Cocktail and entrees such as Veal Oscarand Chicken Chasseur that draw heavily from French cuisine.
“It really has been a fun and collaborative process developing the new Then & Now menu,” said Executive Chef John Roberts. “Serving these memorably classic dishes from an earlier era brings the property’s uniquely rich history to life in a very tangible way, and I’m sure our guests will be as delighted to enjoy them as we are to prepare them.”
This spring, Circa 59 will expand the Then & Now menu by adding tableside service from a customized flambé cart from Germany. Servers will prepare classic desserts such as Bananas Fosters, Strawberry Flambé and Crepe Suzette. Guests will also have the option of selecting meat and fish dishes for two prepared on the cart.
Additionally, appetizers and starters from the Then & Now menu will be available at Starlight Lounge and SideBar. Circa 59 is open Monday through Saturday from 7 a.m. to 10 p.m., Sunday for breakfast and brunch from 7 a.m. to 2:30 p.m., and for Sunday dinner from 5 p.m. to 10 p.m.
